Grown at high elevations where temperatures drastically vary from day to night, the cherries of this washed coffee from the Sierra Sur region of Oaxaca are developed slowly and fermented in wood tanks. This gives them a unique, sweet, complex finish reminiscent of naturally processed coffees.
