The farm of Pedro Sagastume is named for the proud, iridescent birds that inhabit the forests of the Santa Bárbara region. We love the feeling of beauty that the name "Los Quetzales" evokes while sipping on this stunning, vibrant honey processed coffee. The cup profile has a naturally buoyant sweetness derived from the fruit pectins and mucilage that remain on the coffee seed as it dries (aka the honey process). The Los Quetzales estate itself is nothing short of magical - located at the base of a mountainous national park where the singsong of the tropical birds and the cries of howler monkeys follow you through the dense rows of lush, ripe coffee trees.
